Strawberry and Blueberry Crisp

It’s strawberry season! Whether you are picking them soon at a U-pick farm or grabbing some at your local grocery store for $1/lb, there are so many things to do with berries. Aside from just eating them – jams, tarts, pies, cakes, toppings, the list goes on and on. We are currently making some freezer jam with our strawberries – which will be topping our ice cream with my hot fudge recipe. I’m already salivating.

I have combined my two favorite berries in this crisp but you could really use whatever berries you like, just make it 5 cups. In terms of containers, if you are buying your berries you want a 2 12 oz packages of blueberries and 1 lb of strawberries.

Like any good crisp, this topping has oats. You’ll want to use quick oats. If your house is like mine, we always have packets of instant oatmeal in our pantry that no one is eating. I actually like to use these up in my crisp toppings. I empty them into a strainer and shake off the sugar flavoring. I don’t like throwing away food so this is a good way to use them up.

As the smells waft from your oven, you will not be able to wait long to dig into this crisp so you’ll want some ice cream or whip cream waiting near by. I hope you make this soon – I promise it will not last long in your kitchen.

Strawberry and Blueberry Crisp

Strawberries and blueberries combine with a crunchy oat topping.

Ingredients

  • 1 lb strawberries diced
  • 2 12 oz packages blueberries
  • 2 Tbsp lemon juice
  • 1 tsp lemon zest
  • 2/3 cup sugar
  • 1/3 cup flour
  • 1/2 tsp cinnamon

Topping

  • 3/4 cup quick oats
  • 1/2 cup flour
  • 1/2 cup brown sugar packed
  • 6 Tbsp butter, chilled cubed
  • generous pinch salt

Instructions

  1. Preheat oven to 375°F and grease a square 9 x 9 inch pan.  Rinse all fruit, dice strawberries, and place in a medium bowl.  You should have 5 cups of fruit.  Add lemon juice and zest, toss. 

  2. In a small bowl mix the sugar, flour and cinnamon and add it to the berries.  Toss until combined.  Pour into the prepared pan.

  3. In a food processor, combine the topping ingredients. Pulse until butter is mixed in.  Sprinkle topping over the berries.  Bake in the oven for 30-35 minutes.  Serve warm with ice cream or whip cream.
