Chicken Satay

We love Thai food over here at the Hartlines. It is one of our favorite meals. I love making my red curry soup with mango coconut rice (I can’t really call it sticky rice because I definitely am just using regular rice.) When we make Thai, this chicken satay is always on the menu. With a flavorful marinade, it packs a punch and cooks so fast on the grill, an easy recipe for sure. Also, don’t forget to make the Thai peanut sauce to go with it. Is it really chicken satay without peanut sauce?

Marinade

You will start by making the marinade. The thing I like about this recipe is there’s nothing crazy in this. You should already have most of the ingredients in your kitchen. If you do have to run to the store it would probably be for the fish sauce, coriander or turmeric. Everything else is pretty standard.

You’ll cut a few chicken breasts into 1/4 inch slices and then place them on skewers. I use these 4.5 inch wood skewers. I buy them in bulk because I also use them for my city chicken recipe.

Once they are on the skewers, you’ll place them in a gallon size zip-lock bag. Be careful not to let the sticks poke holes in the bag. Pour in the marinade and move close the bag. Tip the bag up and down making sure all the chicken is coated. Let it sit for at least one hour. The longer the better!

Grilling is easy! Preheat the grill to 400 degrees and cook for a couple minutes on each side. It goes so fast because the chicken is so thin. Serve with my Thai peanut sauce and you have a delicious side that goes perfect with so many meals – not just Thai!

Ingredients

Marinade

  • 2 Tbsp lemon juice
  • ¼ onion diced
  • 4 cloves garlic minced
  • ¼-½ tsp red cayenne pepper adjust for how much spice you like
  • 1 tsp ground ginger
  • 2 Tbsp ground coriander
  • ½ tsp turmeric
  • 2 tsp cumin
  • 3 Tbsp soy sauce
  • 3 Tbsp fish sauce
  • 6 Tbsp brown sugar
  • 2 Tbsp vegetable oil

Chicken

  • 3 large chicken breasts
  • 4.5 inch wood skewers

Instructions

  1. Place all ingredients in a bowl. Whisk until combined.

  2. Slice chicken into 1/4 inch pieces. Place on skewers. Place in a gallon size zip-lock bag. Pour in the marinade and tip from side to side allowing all the chicken to get coated with the marinade. Let sit in the refrigerator for at least one hour. The longer the better.

  3. Preheat the grill to 400°F. Place the chicken skewers on the grill and cook for 2-3 minutes on each side. It really doesn't take that long. Check with a meat thermometer to ensure the chicken is 165°F. Remove from the grill and enjoy with peanut sauce.
