Salmon Dip

My favorite fish is salmon. I wasn’t always a fish lover, which is strange since I grew up 15 minutes from the ocean and just down the road from a marina! I could smell the fish as I rode by on my bike. It always kind of grossed me out. Maybe that is why I never wanted to try it.

I loved fishing, though. My dad would take us fishing out on Lake Okeechobee. He made sure we knew how to clean them too, definitely not my favorite part and I’m not sure I could do it today. We’d go fishing on camping trips as well – did I ever eat one of those fish? NO! Looking back, I should have. I now know I was missing out.

I have since corrected my ways and am willing to try new fish. I have to say, I’m not a big fan of shell fish – crab, lobster, shrimp, scallops – but other fish, I’ll give it a go.

You now know more than you probably needed to about my liking for fish so since we’re talking about things you don’t care about I’ll tell you how I came up with this recipe. I buy my salmon at Costco in the freezer section. It comes with seven pre-portioned servings. When I grill or bake salmon for the family I only use five (Beau won’t eat it – yet (I’m always hopeful;)). That means I have two left. Sometimes I save them and collect them for another dinner or maybe I’ll use them on a night when we have salad. More often, I like to make this dip. It is perfect for an appetizer or a snack. It only takes minutes to make – less than 30 and it is so delicious. With so much dill in my garden right now, I am looking for ways to use it up and this is perfect.

Salmon Dip

This creamy salmon dip has lots of salmon and dill flavor. Perfect as an appetizer or snack – it will not disappoint.

Ingredients

  • 2 salmon fillets pre-portioned fillets
  • 1/2 cup cream cheese softened
  • 1/2 cup sour cream
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp dill weed dried or fresh

Instructions

  1. Line a ¼ sheet baking pan with parchment paper and preheat the oven to 400°F. Place 2 salmon fillets (I buy the pre-portioned fillets from Costco in the freezer section. They are skinless). Coat with olive oil and sprinkle with salt and pepper. Bake for 12 minutes.

  2. In a medium bowl, combine all of the ingredients. When the salmon is done, add to the bowl and mix, separating the pieces with a fork.

  3. Serve with crackers. Enjoy!
