Breakfast Burritos

Breakfast. Some people say it is the most important meal of the day. I am not a nutritionist or anything close so I can’t claim that breakfast is important for scientific reasons. I am human, though, and know that I need fuel for the day. So breakfast, it’s an important meal. It is also important for that first meal to be healthy.

In my house, Monday through Friday breakfasts are fairly simple and often are just a fruit smoothie. If I am feeling energetic or have extra time, maybe I’ll whip up some buttermilk pancakes. Maybe. However, things move fast in the morning and there’s usually not a whole lot of time to make a homemade, hot breakfast. The weekend is where my breakfast game shines. Did I mention that I LOVE breakfast food? Yes, I do. Eggs, waffles, hash browns, french toast, pancakes, breakfast tacos, crepes, cinnamon rolls, etc. I LOVE it all.

Breakfast burritos are a great weekend breakfast or if you are really feeling the meal prepping – a great way to solve the problem of not enough time for weekday hot breakfasts. These burritos are prefect to freeze and then pop in the microwave for a filling, yummy, morning meal.

If you are freezing them, I like to wrap them in foil. In the morning, I will unwrap the burrito and wrap it in a paper towel. I microwave it for one minute on each side. If it is still cold in the middle, cut it in half and microwave for 30 seconds.

What do I put in my burritos? Scrambled eggs, cheddar cheese, ground sausage, hash browns, pico de gallo (or salsa – but be careful – if it is runny, it could make your tortilla soggy), and last but not least, Southwest Ranch also known as Spicy Sauce (in my house). Of course this is optional but, ya’ll, it’s a good option. I like using preformed hash browns because they are FAST. You could also use tater tots or if you’ve got some time on your hands, homemade hash browns.

Breakfast Burritos

Delicious burritos filled with your favorite breakfast food – eggs, sausage, hash browns and cheese. Add some salsa and Southwest Ranch for some Tex-Mex flavor.

Ingredients

  • 13 eggs
  • 1 lb ground sausage
  • 6 preformed hash browns
  • 1 ½ cups cheddar cheese shredded
  • salt and pepper
  • pico de gallo
  • southwest ranch
  • 6 tortillas

Instructions

  1. Brown sausage in a frying pan on medium heat. Heat a frying pan with ¼ cup of vegetable oil on medium heat. When oil is hot, cook hash browns until golden brown on each side.

  2. Mix eggs in a medium bowl and add salt and pepper. Heat a 10-12 inch frying pan on medium heat and spray with non-stick cooking spray. Scramble the eggs.

  3. Layer the eggs, cheese, sausage, hash browns (cut in pieces), pico de gallo, and southwest ranch. Roll the burrito. If you are freezing them, wrap in foil or saran wrap To reheat – unwrap and wrap them in a paper towel and microwave for one minute on each side. If it is still cool in the middle, cut in half and microwave for 30 seconds.
