Breakfast Tacos

It’s taco Tuesday!  In my world, you can have tacos any day, especially breakfast tacos.  These are easy and a fun way to dress up breakfast food, whether you eat them for breakfast, lunch, or dinner.  They are so versatile and everyone can make them just the way they like!  We do meals like this as much as possible for the picky eater in our family.  The star of all of our Mexican dishes is my Southwest Ranch.  If you haven’t tried it, shame on you.  Make it today!

Breakfast Tacos

Soft taco shells filled with eggs, sausage, potatoes, salsa, cheese, and topped with spicy southwest ranch.

Total Time 30 minutes
Servings 6

Ingredients

  • 13 eggs
  • 1 lb sausage
  • 5 medium potatoes pealed and diced
  • salsa
  • cheese
  • Southwest Ranch or Sour Cream
  • 1/3 cup vegetable oil
  • salt and pepper

Instructions

  1. Peal and dice potatoes.  Heat oil in 12 inch skillet on medium heat.  Place potatoes in the pan.  Cook, stirring occasionally until potatoes are tender and golden brown on the edges.  Add salt and pepper to taste.

  2. In another skillet, on medium heat, add sausage, stirring and breaking up into fine crumbles.  Cook until meat is browned.

  3. Crack eggs into a bowl.  Stir with a fork until well blended and add salt and pepper to your liking.  Cook in a 12 inch skillet on medium to medium low heat.  

  4. Make tacos!
