Breakfast Burritos

Delicious burritos filled with your favorite breakfast food - eggs, sausage, hash browns and cheese. Add some salsa and Southwest Ranch for some Tex-Mex flavor.

Ingredients

  • 13 eggs
  • 1 lb ground sausage
  • 6 preformed hash browns
  • 1 ½ cups cheddar cheese shredded
  • salt and pepper
  • pico de gallo
  • southwest ranch
  • 6 tortillas

Instructions

  1. Brown sausage in a frying pan on medium heat. Heat a frying pan with ¼ cup of vegetable oil on medium heat. When oil is hot, cook hash browns until golden brown on each side.

  2. Mix eggs in a medium bowl and add salt and pepper. Heat a 10-12 inch frying pan on medium heat and spray with non-stick cooking spray. Scramble the eggs.

  3. Layer the eggs, cheese, sausage, hash browns (cut in pieces), pico de gallo, and southwest ranch. Roll the burrito. If you are freezing them, wrap in foil or saran wrap To reheat - unwrap and wrap them in a paper towel and microwave for one minute on each side. If it is still cool in the middle, cut in half and microwave for 30 seconds.
