Zucchini Chocolate Chip Cookies
What? Zucchini in a cookie? We eat it in bread don’t we? Why not a cookie? I have to say, these cookies all but disappear when I make them. They are GOOD!
Because zucchini has such a high percentage of water, even after squeezing it out as much as you can, the cookies tend to bake a little on the cakey side, much like a pumpkin chocolate chip cookie. You will want to squeeze out as much liquid as you can before adding it to the batter.
Zucchini Chocolate Chip Cookies
Delicious, melt in your mouth chocolate chip cookies with zucchini to give it a little boost.
Ingredients
- 1 cup butter softened
- 3/4 cup granulated sugar
- 1 cup brown sugar packed
- 2 eggs
- 2 tsp vanilla
- 2 1/2 cups flour
- 1 tsp baking soda
- 1 tsp salt
- 1/4 tsp cinnamon
- 2 cups semi-sweet chocolate chips
- 1 1/2 cups zucchini grated
Instructions

Preheat oven to 350 degrees F. Line cookie sheets with parchment paper. Grate zucchini and squeeze to drain to make 1 1/2 cups of zucchini.

Cream butter and sugars in a mixing bowl. Add eggs, and vanilla. Mix in the dry ingredients.

Add chocolate chips and zucchini and mix. Place on prepared cookie sheets with a medium ice cream scoop and bake for 10-12 minutes.
