Thai Peanut Sauce
In my mind, you can’t have chicken satay without peanut sauce. This sauce is delicious and super easy to make. It isn’t just good with chicken satay, but just about any chicken! I will say that after you mix all the ingredients in the pot on the stove, take it off the heat and let it sit for 10-15 minutes. It will thicken a bit and be a better consistency for dipping. If you feel like it is too runny at first, don’t fear, it will thicken – I promise!
Thai Peanut Sauce
This easy Thai peanut sauce is a delicious companion to chicken satay or many other chicken dishes.
Ingredients
- 13.5 ounce can unsweetened coconut milk
- 2 ounces Thai red curry paste
- ¾ cup peanut butter preferably unsweetened, but I have used regular creamy peanut butter and it is fine
- ½ Tbsp salt
- ¾ cup sugar
- 2 Tbsp apple cider vinegar
- ½ cup water
Instructions

Add all ingredients to a medium pot over medium heat. Whisk constantly and bring to a boil.

Turn the heat to low and let simmer for 5 minutes, stirring occasionally – you do not want it to burn on the bottom.

Take the pot off the heat and let it cool down for 10-15 minutes. The sauce with thicken as it cools. Enjoy!
