Sugar Cookies

Sugar cookies are a staple in any cookie repertoire.  This happens to be my favorite.  I make them anytime of year.  Do your kids have a class party and you need to plan a snack?  Here you go.  New neighbors next door?  Church party?  Cookies for Santa?

The thing I love about sugar cookies is that you can change the flavor just by adding almond extract.  They are delicious either way.  Not to mention the many options for frosting these babies.  Buttercream, royal, sprinkled sugar.  Our favorite way, and the one I grew up with, is to make a simple powdered sugar/milk frosting just thick enough to spread and then top with colored sugar.

Prep Time 15 minutes
Cook Time 30 minutes
Resting Time 2 hours
Total Time 45 minutes

Ingredients

  • 1/3 cup vegetable shortening
  • 1/3 cup butter softened
  • 1 cup sugar
  • 2 eggs
  • 1/2 tsp vanilla
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 3 cups flour

Instructions

  1. Preheat oven to 350 degrees

  2. Mix the first three ingredients in a stand mixer

  3. Beat the eggs and vanilla into the creamed sugar mixture.  You can also substitute almond flavor for the vanilla, or add a 1/2 tsp of both.

  4. Mix in the dry ingredients and wrap in plastic wrap and let rest in refrigerator for 2 hours.

  5. Roll half of the dough at a time to a 1/4 inch think.  Cut with desired cookie cutters.

  6. Place on a baking sheet and bake for 10-12 minutes.  

  7. Let cool and frost with desired method.
