Preheat oven to 350 degrees
Mix the first three ingredients in a stand mixer
Beat the eggs and vanilla into the creamed sugar mixture. You can also substitute almond flavor for the vanilla, or add a 1/2 tsp of both.
Mix in the dry ingredients and wrap in plastic wrap and let rest in refrigerator for 2 hours.
Roll half of the dough at a time to a 1/4 inch think. Cut with desired cookie cutters.
Place on a baking sheet and bake for 10-12 minutes.
Let cool and frost with desired method.
