This is hands down my most requested recipe.  Every Christmas I make loaves and loaves of pumpkin bread and we give them to neighbors, friends, family, teachers, bus drivers, garbage men, the mail man, the list goes on.  Every year I get at least 3 or 4 requests for the recipe.  Really, people, it is so good.  It is so associated with Christmas in my house that when we eat a slice we immediately hear Nat King Cole singing The Christmas Song in our heads.

Good food is not hard.  I know some of you think cooking or baking might be overwhelming but this recipe is so easy you’ll cry.  There are no tricks, just dump everything in the bowl, mix, and pour into a loaf pan.  You can’t mess it up and you’ll be rewarded for your minor efforts because this bread is everything you want in a sweet bread – moist, full of pumpkin and spices, you’ll NEVER buy another expensive loaf from your favorite bakery.  Think of the money you’ll save!  If you are the type that loves chocolate chips in your pumpkin bread – go ahead and throw those in too, add one cup of chocolate chips per loaf..

I’ve used a few loaf pans in my day and I have to say that this variety by USA Pan Bakeware are my favorite.  The bread pops right out after cooling and are perfect rectangles.  Also, we love to make mini loaves.   More accurately, my kids love the mini loaves.  It is worth the investment to buy a few mini pans.  You can get separate ones, or buy a pan with several.  I have sent them to school with the kids for their classmates and the kids think it is great to get a tiny loaf of bread all to themselves.

I almost always buy the large can of pumpkin and use the entire can and triple the recipe.  You can fit three batches in the bowl of a stand mixer.

Pumpkin Bread

The best pumpkin bread recipe you’ll find:  so moist and full of the pumpkin blend of spices you crave in the fall and winter.

Ingredients

  • 2 eggs
  • 1/2 cup oil
  • 1/4 cup water
  • 1 1/2 cups sugar
  • 1 cup pumpkin
  • 1 2/3 cups flour
  • 1 tsp baking soda
  • 1/4 tsp baking powder
  • 3/4 tsp salt
  • 1/2 tsp cloves
  • 1/2 tsp cinnamon
  • 1 cup semi-sweet chocolate chips optional

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  Spray loaf pans with non-stick cooking spray.  

  2. Mix eggs, oil, water, sugar and pumpkin in a stand mixer. Add dry ingredients and mix well, scraping sides as needed. Mix until smooth.

  3. Pour into loaf pans and bake for 50-60 minutes, until a toothpick comes out clean.
