Pork Chops and Dirty Rice
Do you have recipes that everyone in the family requests? This is one of them right from Andy’s mom. Before I became a vegetarian for 20 years, I loved pork chops. When I started eating meat again, I still loved them. You might be scared of the name: dirty rice? Well, we call it dirty because that is they way it looks, slightly brown, kinda like dirt. No fear! There is no dirt!
The great thing is that this recipe is customizable according to the size of the party you are feeding. If you only need 4 pork chops, great. We have a big family so I buy packages with 6-10 (we like leftovers). I do not use the bone in pork chops simply because they are easier to cut without the bone.
You will start by browning the pork chops in a frying pan over medium heat. Cook them until the sides are just brown – maybe for just one minute. Place them in a 9 X 13 pan. You will then pour rice over the pork chops in the pan. Again, use as much rice as you need – at least one cup. I usually use 1 1/2 for our family.
Into the frying pan, add a whole sliced onion, the amount of water you need for the rice (2:1) and a packet of onion soup mix. No matter how much rice you use, you will still use one package of the onion soup mix. Stir until combined and pour over the rice and pork chops. Cover with foil and into the oven for 1 hour.

Ingredients
- 6-10 pork chops boneless
- 1 1/2 cups rice
- 1 onion sliced
- 1 package onion soup mix
- 1 Tbls butter
- salt and pepper

Preheat oven to 350 degrees Fahrenheit. Melt butter in a 12 inch frying pan over medium heat. Place pork chops in until just browned on each side (maybe one minute, careful not to over cook. Place in 9 X 13 inch baking dish.

Pour rice over the pork chops. In the frying pan, add sliced onions, water, and onion soup mix. Stir and let simmer for a minute. Pour over the rice and pork chops.

Cover the dish with aluminum foil and bake for 1 hour. Serve with applesauce and a vegetable or salad.
Is the rice cooked ahead, or is the rice poured over the chops uncooked?
Uncooked. Just pour it over dry.
