Mint Brownies
Like I have mentioned before, you can pretty much guarantee that I am going to love anything with mint and chocolate: grasshopper milkshakes, Stephen’s mint truffle hot chocolate, my Double Chocolate Chip Mint Cookies, the list goes on. Add mint brownies to the list.
I first published this recipe at Christmas time using a boxed brownie mix. My favorite one by far is Ghirardelli. Their triple chocolate brownies and the triple fudge are both delicious. You can use whatever box mix you like, however, this homemade brownie recipe is going to knock your socks off. It did mine! I am a firm believer in not reinventing the wheel. If there is a great brownie recipe out there, I want to find it. Well people, I have! This recipe comes from a book called Weeknight Baking by Michelle Lopez. It is 100% the best homemade brownie recipe I have ever made. It has quickly become my go to for brownies.
Whatever way you choose to make the brownies, the real star of the show is the mint icing. It is super easy and takes your brownies to another level. Be sure to use peppermint oil and not extract. The oil will give you the best peppermint flavor. Try not to eat the whole pan!
Mint Brownies
This homemade brownie recipe is simple and delicious. Topped with mint green icing, these mint brownies are melt in your mouth heaven!
Ingredients
Brownies
- 3 cups sugar
- 1½ cups flour
- 1 ⅓ cups cocoa powder sifted if lumpy
- 1 cup powdered sugar sifted if lumpy
- 1 cup semi-sweet or dark chocolate chips
- 1 ½ tsp salt
- 4 large eggs
- 1 cup vegetable oil
- 4 Tbsp water
- 1 tsp vanilla
Mint Icing
- ½ cup butter softened
- 3 cups powdered sugar
- 2-6 Tbsp milk or cream
- 2-4 drops peppermint oil
- 3-5 drops green food coloring

Preheat the oven to 325°F. Line a 9×13 inch metal baking pan with parchment paper.

In a large bowl, whisk together the sugar, flour, cocoa powder, powdered sugar, chocolate chips and salt.

In another large bowl, whisk together the eggs, oil, water, and vanilla.

Add the dry ingredients to the wet ingredients and mix with a hand mixer until just combined.

Pour the batter into the prepared pan (it will be thick) and use a spatula to spread out evenly and smooth the top. Bake for 35 minutes, until the middle is set. Be careful not to over bake. Cool completely before icing.
Mint Icing

With a mixer, combine the butter and sugar. Add the milk or cream a tablespoon at a time. You want the icing to be smooth but fluffy. Add the peppermint oil and food coloring. Start with a small amount and add more if desired. Spread on cooled brownies. Enjoy! Keep in an airtight container.
