Mint Brownies

This homemade brownie recipe is simple and delicious. Topped with mint green icing, these mint brownies are melt in your mouth heaven!

Ingredients

Brownies

  • 3 cups sugar
  • cups flour
  • 1 ⅓ cups cocoa powder sifted if lumpy
  • 1 cup powdered sugar sifted if lumpy
  • 1 cup semi-sweet or dark chocolate chips
  • 1 ½ tsp salt
  • 4 large eggs
  • 1 cup vegetable oil
  • 4 Tbsp water
  • 1 tsp vanilla

Mint Icing

  • ½ cup butter softened
  • 3 cups powdered sugar
  • 2-6 Tbsp milk or cream
  • 2-4 drops peppermint oil
  • 3-5 drops green food coloring

Instructions

Brownies

  1. Preheat the oven to 325°F. Line a 9x13 inch metal baking pan with parchment paper.

  2. In a large bowl, whisk together the sugar, flour, cocoa powder, powdered sugar, chocolate chips and salt.

  3. In another large bowl, whisk together the eggs, oil, water, and vanilla.

  4. Add the dry ingredients to the wet ingredients and mix with a hand mixer until just combined.

  5. Pour the batter into the prepared pan (it will be thick) and use a spatula to spread out evenly and smooth the top. Bake for 35 minutes, until the middle is set. Be careful not to over bake. Cool completely before icing.

Mint Icing

  1. With a mixer, combine the butter and sugar.  Add the milk or cream a tablespoon at a time.  You want the icing to be smooth but fluffy.  Add the peppermint oil and food coloring.  Start with a small amount and add more if desired. Spread on cooled brownies.  Enjoy! Keep in an airtight container.
