Loaded Fries
When we lived in Pennsylvania, one of our favorite restaurants was Jesse’s Barbecue. If you are ever in Souderton, PA – you should go. It is so good that our resident meat-eater, Emma, wanted to go for her birthday dinner. She was sorely disappointed because it happens to be closed on Mondays, which we didn’t know until we drove up and saw an empty parking lot. She had to wait a night to get her Jesse’s fix.
This recipe comes from a menu item of their’s called – you guessed it – Loaded Fries. I am not creative enough to come up with a different name. The name pretty much describes the dish – french fries loaded with pulled pork and drizzled with cheese sauce. I can’t begin to describe how good these are. This is coming from a girl who isn’t a big meat-eater. The pulled pork is so tender thanks to the instant pot. Don’t worry if you don’t have one (but you should get one), you can still use a crock pot. Also, by using my air fryer to cook the fries, I have decreased the calories from greasy french fries but you can achieve the same thing by baking the fries in your oven. No matter which kitchen appliances you use, trust me, these loaded fries will change your life.
Loaded Fries
French fries topped with pulled pork and drizzled with creamy cheese sauce.
Ingredients
- 64 oz package of regular cut french fries
- 2-3 lbs pork shoulder butt roast
- 1 cup chicken broth
- salt
- pepper
- 4 Tbsp butter
- 3 Tbsp flour
- 2 cups milk
- 1 cup white cheddar cheese shredded
- 1 cup monterey jack cheese shredded
Instructions
-
For an instant pot, spray pot with non-stick cooking spray. Place pork in the pot frozen or thawed. Add one cup of chicken broth and sprinkle with salt and pepper. Place the lid on the pot and move the pressure release to sealing. Cook for one hour on high pressure. For a crock pot, do the same with the pork but cook on low for 5-7 hours.
-
When the pork is almost done. Cook the french fries according do your desired method. You could bake them in the oven, fry them in a fryer, or cook them in an air fryer.
-
For the cheese sauce, melt the butter in a medium sauce pan. Add flour and whisk for about one minute. Add milk and stir constantly until it just comes to a boil and thickens. Add cheeses and stir until it melts. Add salt and pepper to taste.
-
When the meat is done and the instant pot has kept warm for 10 minutes, turn the pressure release to venting. Once the valve has gone down, open the pot and shred the pork.
-
Arrange fries on a plate, place pork on top and then drizzle the cheese sauce on top of the pork and fries. Enjoy!
