Lemon Fluff Squares

Right about now, in the middle of January, I start pining for summer. It doesn’t take much of winter for me to be over it. Yes, I like a white Christmas, but after that, I’m done. I know I am not alone. When I saw this recipe in an old cookbook, I decided it was just what I needed to drown out those winter blues.

Nothing says summer better than lemons! You all know how much I love lemon desserts: these lemon cremes for example, or lemon bars, or this lemon cheesecake is also divine. These lemon fluff squares are equally as good and super easy to make. Really easy, trust me with only a handful of ingredients, it will come together quickly and you’ll be feeling all the summer vibes in no time.

Lemon Fluff Squares

Ingredients

  • 70 buttery crackers such as Town House Original crushed
  • ½ cup butter melted
  • ¼ cup powdered sugar
  • 6 oz frozen lemonade
  • 14 oz can sweetened condensed milk
  • 16 oz whipped topping
  • 1 ½ Tbsp lemon juice

Instructions

  • Crush the crackers in a gallon size zip-lock bag. Pour into a medium bowl. Melt butter and pour into the crackers. Add powdered sugar and mix, reserving ⅔ cup for topping. Press the remaining mixture into a 9 x 13 inch pan.
  • In another mixing bowl, combine the frozen lemonade, sweetened condensed milk, whipped topping, and lemon juice until smooth. Spread over the cracker mixture evenly. Top with the reserved ⅔ cup. Refrigerate for 2-3 hours or over night.
