Grilled Zucchini Caprese
Fast and easy, healthy and delicious. There is not much more to say. When you have tomatoes and zucchini taking over your garden, this is a great way to get rid of some. Either a healthy lunch or a nice appetizer, you can’t go wrong. The balsamic vinegar reduction adds a zing of flavor. I didn’t have any basil in my garden when I made them, but if you do, you should add some of those leaves and devour it all as soon as possible!

Grilled Zucchini Caprese
Fresh and light this grilled zucchini caprese would make a healthy lunch or delicious appetizer.
Ingredients
- 2 zucchini sliced long ways
- tomatoes sliced
- fresh mozzarella
- 1/4 cup butter
- 1/4 cup balsamic vinegar
- olive oil
- salt
- pepper
Instructions

Melt butter in a small sauce pan with balsamic vinegar. Whisk together and simmer until thickened.

Slice zucchini and coat with olive oil. Sprinkle with kosher salt and cracked pepper. Cook on grill for about 2 minutes on each side being careful not to over cook. You want it to still be a bit firm.

Place slices of tomatoes and cheese on zucchini and drizzle with balsamic vinegar reduction.
