Grilled Salmon with Mango Salsa

Growing up, I never ate fish.  I lived 5 minutes from the inter-coastal in FL and NEVER ATE FISH!  Truth – I was a vegetarian from age 10-25.  I was pregnant with Emma (13) when I started to eat a little meat again.  And no joke, that girl LOVES meat.  I can’t say I have embraced the world of fish entirely.  I can’t do crab or shrimp or scallops.  No sushi for me.  I stick to the more mild varieties – halibut, cod, tilapia, tuna, and yes, salmon.

It wouldn’t be exaggerating to say that we eat salmon once a week so needless to say I have become pretty darn good at cooking it.  It is very easy to over cook so you have to watch the time.  Our favorite way right now is grilled.  I buy my salmon at Costco.  I usually get a bag of frozen pre-portioned fillets without the skin.  It makes is so much easier to just thaw, rinse, season, and cook.  You can also get it at Walmart.  Costco’s is the best.  Take my word for it!

A couple weeks ago, Andy was out of town and we were thinking of what to have for dinner.  Gabi suggested salmon and then MANGO SALSA – I love this girl!  I had the salmon but we needed some mangoes so off to the store we went.  We bought three.  One was perfect, the other two, not so much so our sticky rice was lacking a lot of the mango.  You win some, you lose some.  We served it with grilled pineapple and some sticky rice with (a little bit of) mango (that recipe is for another post!)  This so easy and so delicious.  We will definitely be repeating the heck out of it.  The left over salmon is perfect the next day with a salad for lunch

Grilled Salmon with Mango Salsa

Easy, delicious grilled salmon with a sweet and spicy mango salsa.

Ingredients

  • 6 salmon fillets
  • olive oil
  • salt and pepper

Mango Salsa

  • 1 mango cut in small pieces
  • ½ jalepeno diced
  • 1-2 Tbsp finely diced onion
  • ½ tsp sugar to release the juices in the mango

Instructions

  1. Preheat Grill to 500°F. Rinse and dry the salmon fillets. Brush both sides with olive oil and sprinkle with salt and pepper.

  2. Grill on each side for 4 minutes. Check by cutting your thickest fillet in half. You want in to be tender and juicy but not raw.

Mango Salsa

  1. Mix all ingredients and serve over the salmon.
