Grilled Salmon with Mango Salsa

Easy, delicious grilled salmon with a sweet and spicy mango salsa.

Ingredients

  • 6 salmon fillets
  • olive oil
  • salt and pepper

Mango Salsa

  • 1 mango cut in small pieces
  • ½ jalepeno diced
  • 1-2 Tbsp finely diced onion
  • ½ tsp sugar to release the juices in the mango

Instructions

  1. Preheat Grill to 500°F. Rinse and dry the salmon fillets. Brush both sides with olive oil and sprinkle with salt and pepper.

  2. Grill on each side for 4 minutes. Check by cutting your thickest fillet in half. You want in to be tender and juicy but not raw.

Mango Salsa

  1. Mix all ingredients and serve over the salmon.
