French Toast
My love for breakfast food is right up there with Ron Swanson and Leslie Knope. If you don’t know who those people are, you need to watch Parks and Recreation. French Toast is on the top of the list with waffles. I think I consume more bread at breakfast than any other meal besides Pizza Friday. Really, we only eat a big breakfast on the weekends but let me tell you, it is a highly anticipated meal in this house.
You may look at the recipe and wonder, “Should I use soy milk? I am not really a soy milk fan.” If you don’t buy or have soy milk on hand, you are welcome to use regular old cows milk, however, trust me on this, the soy milk tastes better. I happen to be a fan of the Silk brand. Give it a try at least once and let me know what you think. If you have some left over, it is great in smoothies.
Who can resist, fluffy Texas Toast topped with fruit and whip cream? Um, pretty much no one, even the guy in the house who does’t like eggs! If you are looking for a Sunday morning breakfast favorite, you have found it.
French Toast
Texas Toast soaked in vanilla, eggs, and cinnamon milk mixture cooked until golden.
Ingredients
- 2/3 cup vanilla soy milk
- 2 eggs
- 1/2 tsp vanilla
- 1/2 tsp cinnamon
- 8 slices Texas Toast
- 4 Tbls butter
Instructions

Preheat griddle to 325 degrees Fahrenheit.

Mix ingredients except toast in a shallow bowl.

Spread butter on the griddle.

Dip slices of bread in mixture and flip over to completely cover the bread with mixture. Place on griddle. Cook on each side until golden, about 2-3 minutes.

Serve with fresh fruit, maple syrup, and whip cream.
