Cookie Fruit Tart
Summer is almost here are that means loads of fresh fruits and veggies. This cookie is the perfect treat for a picnic or summer holiday gathering. On Father’s Day, we always bring treats to church for the men and this has been my go to for years. The cookie is soft and light, the “icing” is a little surprise all by itself, and the fruit makes you feel like you are being kind of healthy;) It tastes like you are eating a fruit tart, but in cookie form.
The cookie is actually my snickerdoodle recipe without the cinnamon and sugar on it. Super easy! If you don’t have time to make the cookies, you can also use pre-packaged refrigerated sugar cookie dough. The icing is a blend of cream cheese, powdered sugar, the juice of one lime, and lime zest. So delicious – they are always the first to disappear at any party.
Cookie Tart

Ingredients
Cookie
- 1/2 cup butter
- 1/2 cup vegetable shortening
- 1 1/2 cups sugar
- 2 eggs
- 1/2 tsp salt
- 1 tsp baking soda
- 2 tsp cream of tartar
- 2 1/2 cups flour
Icing
- 8 oz cream cheese softened to room temperature
- 1 cup powdered sugar
- 2 Tbsp lime juice
- 1 tsp lime zest
Fruit
- 1 lb strawberries cut in half or quarters depending on size
- blackberries
- 3 kiwi peeled and sliced
Instructions
Cookies

Preheat oven to 350 degrees Fahrenheit.

In a stand mixer, cream butter, shortening, and sugar.

Add eggs and mix until combined.

In a small bowl mix the dry ingredients.

Add the dry ingredients to the wet mixture.

Roll dough into a ball slightly smaller than a golf ball and place about two inches apart on a baking sheet lined with parchment and sprayed with non-stick cooking spray.

Bake for 10-12 minutes, until the cracking appears on the top. Let cool for five minutes and then place on a cooling rack until they are ready to ice.
Icing

Combine all ingredients with a hand mixer until smooth.

Spread icing on each cookie and place a piece of each fruit on top. Enjoy!
