Cookie Tart

Fresh fruit on top of a soft cookie with lime infused icing.

Ingredients

Cookie

  • 1/2 cup butter
  • 1/2 cup vegetable shortening
  • 1 1/2 cups sugar
  • 2 eggs
  • 1/2 tsp salt
  • 1 tsp baking soda
  • 2 tsp cream of tartar
  • 2 1/2 cups flour

Icing

  • 8 oz cream cheese softened to room temperature
  • 1 cup powdered sugar
  • 2 Tbsp lime juice
  • 1 tsp lime zest

Fruit

  • 1 lb strawberries cut in half or quarters depending on size
  • blackberries
  • 3 kiwi peeled and sliced

Instructions

Cookies

  1. Preheat oven to 350 degrees Fahrenheit.

  2. In a stand mixer, cream butter, shortening, and sugar.

  3. Add eggs and mix until combined.

  4. In a small bowl mix the dry ingredients.

  5. Add the dry ingredients to the wet mixture.  

  6. Roll dough into a ball slightly smaller than a golf ball and place about two inches apart on a baking sheet lined with parchment and sprayed with non-stick cooking spray.

  7. Bake for 10-12 minutes, until the cracking appears on the top.  Let cool for five minutes and then place on a cooling rack until they are ready to ice.

Icing

  1. Combine all ingredients with a hand mixer until smooth.

  2. Spread icing on each cookie and place a piece of each fruit on top.  Enjoy!
