Fresh fruit on top of a soft cookie with lime infused icing.
Preheat oven to 350 degrees Fahrenheit.
In a stand mixer, cream butter, shortening, and sugar.
Add eggs and mix until combined.
In a small bowl mix the dry ingredients.
Add the dry ingredients to the wet mixture.
Roll dough into a ball slightly smaller than a golf ball and place about two inches apart on a baking sheet lined with parchment and sprayed with non-stick cooking spray.
Bake for 10-12 minutes, until the cracking appears on the top. Let cool for five minutes and then place on a cooling rack until they are ready to ice.
Combine all ingredients with a hand mixer until smooth.
Spread icing on each cookie and place a piece of each fruit on top. Enjoy!
