Cinnamon Sour Cream Coffee Cake

Some recipes make me very nostalgic.  This is one of them.  It makes me miss my mom.  Her hand written recipe, memories of winter mornings when she would have a fire going (yes we had an actual wood burning fireplace in South Florida), waking up to the warm cinnamon smell.  It will be 19 years in November since she passed away and there are moments when it feels like yesterday.  It is true, as time passes, we get used to our loved ones being gone, but we don’t miss them any less.   I hold on to memories like this and tell them to my children so that in some way, she will live on through me.  All of these memories make me like this recipe that much more.

Delicious vanilla cake with cinnamon and nuts swirled in the middle served with hot chocolate or coffee as the name suggests (though I wouldn’t know because I am more of a hot chocolate gal).  It is the perfect fall breakfast or afternoon snack.

  

Cinnamon Sour Cream Coffee Cake

Delicious vanilla cake swirled with cinnamon and nuts make this cake perfect for breakfast with a cup of hot chocolate or coffee.

Ingredients

  • 1 cup butter
  • 1 1/4 cup sugar
  • 1 cup sour cream
  • 2 cups flour
  • 1/2 tsp baking soda
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp vanilla
  • 3/4 cup pecans or walnuts chopped
  • 1 tsp cinnamon
  • 3 Tbsp sugar

Glaze

  • 1 2/3 cups powdered sugar
  • 1/4 tsp vanilla
  • dash cinnamon
  • 2 Tbsp milk

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  Grease and flour a tube or bundt pan.

  2. Mix butter, sugar, vanilla, and eggs.  Blend in sour cream.

  3. Sift dry ingredients into the creamed mixture.   In a small bowl combine the chopped nuts, cinnamon and sugar.

  4. Pour half of the mixture into the pan and top with half of the nut mixture. It will be thick so it is more like spooning the mixture in.  Poor in remaining mixture and top with remaining nut mixture.  

  5. Bake for 45 minutes, until a knife comes out clean.  Let cool and turn out on a large plate.  

Glaze

  1. Mix all ingredients.  Pour over the top of the cake and let fall down the sides.  Enjoy with a cup of hot chocolate or coffee.
