Butterscotch Chocolate Chip Cookies

Someone once asked me what my favorite cookie was. It made me realize that there are so many good cookies in the world, how can I possibly choose one?

This cookie has been a classic in our house for years. It is just our basic chocolate chip cookie recipe but instead of two cups of chocolate chips, you add one and one cup of butterscotch chips. BOOM! It is that easy. It is amazing how changing up one ingredient can take a plain old chocolate chip recipe and move it up a flavor notch.

These cookies are soft and chewy and full of yummy chips, they won’t last long around your house, I promise. You might have to eat a few or maybe five. But I wouldn’t know that from experience or anything!

I always use a medium ice cream scoop to place my cookies on the baking sheet. It makes it so easy and they are all consistent in size. Plus, clean hands!

Butterscotch Chocolate Chip Cookies

Standard chocolate chip cookie recipe with a twist of butterscotch chips.

Ingredients

  • 1 cup butter room temperature
  • 3/4 cup brown sugar packed
  • 3/4 cup sugar
  • 2 tsp vanilla
  • 2 eggs
  • 2 1/2 cups flour well packed
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 cup semi-sweet chocolate chips
  • 1 cup butterscotch chips

Instructions

  1. Preheat oven to 350°F and line baking sheets with parchment paper.  In a mixer, cream butter and sugars.  Add eggs and vanilla and mix.

  2. Add flour, baking soda, and salt.  Mix until combined.  Add chocolate and butterscotch chips and mix until combined.

  3. With a medium ice cream scoop, place cookie dough ball on baking sheets about 2-3 inches apart.  Bake in the oven for 10-12 minutes.  Let cool for 5 minutes on the baking sheet and then transfer to a wire rack to finish cooling.  Enjoy
