Brownie Bars with Mint Nutella Topping
Don’t get me wrong, I like a good brownie, but what I like even better is a brownie topped with something light and fluffy and preferably MINT flavored. We’ve talked about my obsession with chocolate and mint before so we won’t get into that. We’ve also talked about how boxed brownie mixes are amazing and why bother making your own.
Well, suppose you don’t have a box and have a hankering for brownies. Suppose you don’t even have any cocoa powder. Problem solved. This is your recipe. It is super easy and can be made with what’s in your pantry. Not to mention – delicious – of course!
Brownie Bars with Mint Nutella Topping
Dense brownies with soft fluffy whipped cream mixed with nutella and mint.
Ingredients
Brownies
- 3/4 cup butter
- 1/2 cup semi-sweet chocolate chips
- 1 1/3 cups sugar
- 3 eggs
- 1 cup flour
- 1 tsp baking powder
- 1/2 tsp salt
Mint Nutella Topping
- 1 cup heavy whipping cream
- 3 Tbsp sugar
- 1/2 tsp vanilla
- 1/2 cup nutella
- 3 drops peppermint oil
Instructions

Preheat oven to 350° F and grease and flour a 9×13 inch pan.

Melt butter in a medium size bowl. In a small bowl melt chocolate chips in the microwave for 1 minute and stir until smooth. Microwave for 10 more seconds if all of the chips haven’t melted.

Mix sugar and melted chocolate into the butter. Add one egg at a time, mixing each time.

Add flour, baking soda, and salt and mix until smooth. Pour into the prepared pan and bake for 25 minutes. While the brownies are cooking, prepare the topping. Let cool completely.
Mint Nutella Topping

Pour whipping cream, sugar, and vanilla in a bowl and whip with a hand mixer until firm and holds it shape.

Fold in the Nutella and add three drops of peppermint oil. Refrigerate until the brownies are cool. Once cool, spread over the top of the brownies and serve.
