Dense brownies with soft fluffy whipped cream mixed with nutella and mint.
Preheat oven to 350° F and grease and flour a 9x13 inch pan.
Melt butter in a medium size bowl. In a small bowl melt chocolate chips in the microwave for 1 minute and stir until smooth. Microwave for 10 more seconds if all of the chips haven't melted.
Mix sugar and melted chocolate into the butter. Add one egg at a time, mixing each time.
Add flour, baking soda, and salt and mix until smooth. Pour into the prepared pan and bake for 25 minutes. While the brownies are cooking, prepare the topping. Let cool completely.
Pour whipping cream, sugar, and vanilla in a bowl and whip with a hand mixer until firm and holds it shape.
Fold in the Nutella and add three drops of peppermint oil. Refrigerate until the brownies are cool. Once cool, spread over the top of the brownies and serve.
