Soft taco shells filled with eggs, sausage, potatoes, salsa, cheese, and topped with spicy southwest ranch.
Peal and dice potatoes. Heat oil in 12 inch skillet on medium heat. Place potatoes in the pan. Cook, stirring occasionally until potatoes are tender and golden brown on the edges. Add salt and pepper to taste.
In another skillet, on medium heat, add sausage, stirring and breaking up into fine crumbles. Cook until meat is browned.
Crack eggs into a bowl. Stir with a fork until well blended and add salt and pepper to your liking. Cook in a 12 inch skillet on medium to medium low heat.
Make tacos!
