Breakfast Burrito Casserole
Breakfast casseroles are perfect for the weekend, lazy Saturday or Sunday mornings when everyone is sleeping in or watching cartoons or if you are in my house, Innovation Nation. They are easy to make ahead and pop in the oven in the morning. Or if you are an early riser, you can throw it together and have it ready for everyone by the time they roll out of bed.
I love breakfast burritos. The only trouble is that I seem to have three different pans going on the stove, trying to time everything just right so it is all done at the same time, hot, and condiments ready. It can be overwhelming. Enter, this casserole. It has everything a breakfast burrito has – in one dish: eggs, sausage, potatoes, tomatoes, onions, and jalapenos. Easy peesy! The only cooking you do is to brown the sausage, everything just gets chopped and put in the dish. Speaking of the dish, I love to use my 9 x 13 glass Pyrex dish for this. It always cooks evenly and is done between 35 and 40 minutes.
After cooking, add shredded cheese, maybe some salsa, sour cream, and you definitely should top it with my southwest ranch. You can roll it all up in a tortilla or save the carbs and enjoy it as is.
This casserole would make a great breakfast for a family reunion. You will probably need two or three of them, but still, so easy.
You can make it vegetarian by omitting the sausage. My little guy and I prefer it sans sausage so after I mix the eggs and veggies, I pour it in the greased dish and then add the sausage to 3/4 of the dish. Finally, I add the tater tots to the entire dish. 35-40 minutes in a 375°F oven and done. You can sprinkle cheese over the dish when it is done, or let everyone do that individually. Since Luke doesn’t like cheese, I let everyone do it themselves. This casserole makes it easy to please all of your people. Enjoy!
Breakfast Burrito Casserole
Eggs, sausage, potatoes, tomatoes, onion, and jalepenos combine to make this easy one dish breakfast.
Ingredients
- 12 large eggs
- 1 lb ground regular or hot sausage
- 1 tomato diced
- 1 jalepeno diced
- 1/2 cup onion diced
- 1/2 tsp salt
- 1/8 tsp pepper
- 55-60 tater tots
- 1 1/2 cups cheddar cheese shredded
- sour cream, salsa, southwest ranch
Instructions

Preheat oven to 375°F and grease a 9 x 13 inch casserole dish or pan. (I melt about 1 1/2 Tbs butter in my glass Pyrex dish but you can also spray with non-stick cooking spray).

In a medium bowl, crack eggs and mix with a fork.

Dice tomatoes, onions, and jalepeno and add to the eggs. Add salt and pepper and mix.

In a 12 inch frying pan over medium heat, break sausage into crumbles and cook until browned.

Pour egg mixture into the dish, add sausage and then place the tater tots in rows on top. Bake for 35-40 minutes until the egg is set. Serve immediately with cheese and desired toppings.
