Ingredients

  • 12 large eggs
  • 1 lb ground regular or hot sausage
  • 1 tomato diced
  • 1 jalepeno diced
  • 1/2 cup onion diced
  • 1/2 tsp salt
  • 1/8 tsp pepper
  • 55-60 tater tots
  • 1 1/2 cups cheddar cheese shredded
  • sour cream, salsa, southwest ranch

Instructions

  1. Preheat oven to 375°F and grease a 9 x 13 inch casserole dish or pan. (I melt about 1 1/2 Tbs butter in my glass Pyrex dish but you can also spray with non-stick cooking spray).

  2. In a medium bowl, crack eggs and mix with a fork.

  3. Dice tomatoes, onions, and jalepeno and add to the eggs. Add salt and pepper and mix.

  4. In a 12 inch frying pan over medium heat, break sausage into crumbles and cook until browned.

  5. Pour egg mixture into the dish, add sausage and then place the tater tots in rows on top. Bake for 35-40 minutes until the egg is set. Serve immediately with cheese and desired toppings.
