Apple Cinnamon Cupcakes
School has started so that means apples, right? Fall is just around the corner and what better way to usher in the the school year and coming of fall than with apple cinnamon cupcakes. This recipe was adapted from my mother-in-law’s apple cake, which is equally delicious! It is all that a cupcake should be and tastes almost healthy with the apples. Not really, but we’ll pretend. They will be waiting for my kids as they walk through the door. We’ll sit down and chat about their day over a cup of Stephen’s Hot Chocolate and Apple Cinnamon Cupcakes. Life is oh so sweet.
Apple Cinnamon Cupcakes
Soft, moist, cinnamon cake with apple chunks. These cupcakes will melt in your mouth.
Ingredients
- 2 cups flour
- 1 3/4 cups sugar
- 1 tsp salt
- 1 tsp baking soda
- 2 tsp baking powder
- 1 tsp cinnamon
- 1 cup vegetable oil
- 1 cup buttermilk
- 3 eggs
- 3 cups apples chopped (about 2 apples)
Whip Cream Topping
- 2 cups whip cream
- 1/2 cup sugar
- 1 tsp vanilla
- cinnamon
Instructions

Preheat oven to 350 degrees Fahrenheit. Line cupcake tin with baking cups. Whisk together dry ingredients in a large bowl.

In a separate bowl, mix together wet ingredients. Then pour into the dry ingredients and stir until combined. Add apples and stir.

Drop batter into prepared tins with a medium ice cream scoop. Bake for 15 minutes, until a toothpick inserted comes out clean. Let cool before frosting.
Whip Cream Topping

Mix all ingredients including a couple shakes of cinnamon in a bowl with a hand mixer for 1-2 minutes, until stiff peaks form. Do not over beat or you will have sweet butter!
