Apple Cinnamon Cupcakes

Soft, moist, cinnamon cake with apple chunks.  These cupcakes will melt in your mouth.

Ingredients

  • 2 cups flour
  • 1 3/4 cups sugar
  • 1 tsp salt
  • 1 tsp baking soda
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • 1 cup vegetable oil
  • 1 cup buttermilk
  • 3 eggs
  • 3 cups apples chopped (about 2 apples)

Whip Cream Topping

  • 2 cups whip cream
  • 1/2 cup sugar
  • 1 tsp vanilla
  • cinnamon

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.  Line cupcake tin with baking cups.  Whisk together dry ingredients in a large bowl.

  2. In a separate bowl, mix together wet ingredients.  Then pour into the dry ingredients and stir until combined.  Add apples and stir.  

  3. Drop batter into prepared tins with a medium ice cream scoop.  Bake for 15 minutes, until a toothpick inserted comes out clean.  Let cool before frosting.

Whip Cream Topping

  1. Mix all ingredients including a couple shakes of cinnamon in a bowl with a hand mixer for 1-2 minutes, until stiff peaks form.  Do not over beat or you will have sweet butter!
