Swedish Pancakes/Crepes

Today is Emma’s birthday and she requested Thin Pancakes.  It is a popular birthday breakfast request in our house.  And why wouldn’t it be, they are SO good.  We ate them with homemade strawberry freezer jam.

Let me preface this post by saying that this is not an official crepe recipe.  I am NOT French.  However, these are crepes.  Honestly, I have eaten crepes, and these are as crepe like as it can get.  Half of my ancestry is Swedish and this recipe started out as Swedish Pancakes.  My sister and would make these every Sunday after church.  They have been a part of my life forever and are a family favorite.  I have modified it over the years, thinning it out.  Adding butter!  Of course, adding butter!

One thing that I think is essential is after you pour the batter onto the griddle, smooth and widen the circle with the back of the spoon.  This will make a thinner more crepe-like pancake. I use the Presto Tilt and Drain Griddle.  My mother-in-law gave it to us years ago and it is still going strong.  It is large in both length and width.  If you don’t own a griddle and are shopping for one, follow the Amazon link.  I also love my Tupperware measuring bowl. Pyrex also makes one too but it is glass, so a bit heavier.  It is perfect for pancakes!

I like to make some small pancakes for the kids to snack on while I am make the rest.  It takes a little while to get them all done and that prevents them from tearing into the big ones.  And lets just be honest, I snack on them too!  On this particular day, my brother and sister-in-law and their daughter were visiting.  Hannah loved helping with the whip cream.  Beau sliced up the bananas and strawberries.

We love to serve them will fruit, jam, peanut butter, Nutella, whip cream, and syrup.  Get creative – sometimes we use them like a tortilla and make breakfast wraps with scrambled egg and hash browns.  You can go sweet or savory.  It is a very versatile breakfast/meal.

My favorite savory pancake is Mexican style – throw in some cheesy scrambled eggs and top with guac, salsa, and my southwest ranch.  YUM.

Swedish Pancakes/Crepes

These versatile pancakes can be spread and rolled with fruit, jam, veggies, or eggs.

Ingredients

  • 3 1/2 cups milk
  • 4 eggs
  • 2 Tbls sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 1/4 cup butter melted
  • toppings of your choice

Instructions

  1. Mix all ingredients except butter in an easy to pour bowl - I use a large measuring cup style Tupperware bowl.

  2. Add melted butter last, slowly pouring in. Mix until incorporated. If using an electric hand mixer - the top will be bubbly/frothy. You can let it sit for a minute or two to get rid of the bubbles or just begin to pour on griddle - your choice.

  3. Once poured onto griddle, smooth pancake out with the back of a spoon.

  4. Flip pancake when golden spots appear. (we call it giraffe skin)

  5. Serve with your favorite fruit or spreads.
