Swedish Pancakes/Crepes

These versatile pancakes can be spread and rolled with fruit, jam, veggies, or eggs.

Ingredients

  • 3 1/2 cups milk
  • 4 eggs
  • 2 Tbls sugar
  • 2 cups flour
  • 1/2 tsp salt
  • 1/4 cup butter melted
  • toppings of your choice

Instructions

  1. Mix all ingredients except butter in an easy to pour bowl - I use a large measuring cup style Tupperware bowl.

  2. Add melted butter last, slowly pouring in. Mix until incorporated. If using an electric hand mixer - the top will be bubbly/frothy. You can let it sit for a minute or two to get rid of the bubbles or just begin to pour on griddle - your choice.

  3. Once poured onto griddle, smooth pancake out with the back of a spoon.

  4. Flip pancake when golden spots appear. (we call it giraffe skin)

  5. Serve with your favorite fruit or spreads.
