These versatile pancakes can be spread and rolled with fruit, jam, veggies, or eggs.
Mix all ingredients except butter in an easy to pour bowl - I use a large measuring cup style Tupperware bowl.
Add melted butter last, slowly pouring in. Mix until incorporated. If using an electric hand mixer - the top will be bubbly/frothy. You can let it sit for a minute or two to get rid of the bubbles or just begin to pour on griddle - your choice.
Once poured onto griddle, smooth pancake out with the back of a spoon.
Flip pancake when golden spots appear. (we call it giraffe skin)
Serve with your favorite fruit or spreads.
