Tofu Stuffed Pita

I was raised by a very health conscience mother. I think all of the ingredients for this pita were a staple in our refrigerator growing up. I never, in my life, saw my mother eat a piece of meat. I remember when we bought actual chocolate chips to make cookies rather than carob chips. The most memorable culinary creation were these homemade veggie burgers. They were horrendous. She called them walnut burgers and while I gave them a good effort, I preferred to stick with Morningstar Farms or Boca when it came to veggie burgers. My dad lovingly called them bird seed burgers and that is a pretty accurate description in terms of taste and texture.

I do have to give my mom some credit, she was very healthy and instilled in me my love for vegetables. While I make her out to be some granola veggie lady, she also had her vices. French fries – one of our favorite things to do on the weekend was stay up late watching rom coms (Dirty Dancing, Pretty Women, Steal Magnolias) and eating french fries. Also, pizza – which I have continued the tradition of pizza Friday at our house. She loved to dip her crust into her Sprite and eat it. Don’t knock it until you try it!

Well, back to the tofu stuffed pita. The first time I had tofu this way was at a vegan cafe/health food store in downtown Stuart. I am not sure if it is still there but if you happen to visit Stuart, FL, make sure you take a stroll through downtown. It is beautiful and full of fun galleries and good eats. Not to mention it is right steps away from the water and picturesque in so many ways. (I was really lucky to grow up in such a beautiful place.)

For this pita, we are mimicking scrambled eggs with the tofu. You simply take a fork and squish the tofu into crumbles, add the spices, and warm them in a frying pan the way you would scrambled eggs. I love the dill flavor for tofu this way but feel free to spice it however you like. We’ll add cucumbers and sprouts to this pita but you can load it up with all kinds of things, i.e. spinach, tomatoes, thinly sliced carrots, etc.

A quick word about pita bread. I grew up eating pita with the pockets. I LOVE THE POCKETS! What girl doesn’t like pockets? Pockets for your food? Even better! You can cram all the food you want in these pockets – so fun for kids too! Of course you can use pita that you fold, but really, the pockets are better;) I can usually find them in my local grocery store – the package will say pocket on it so just look for that.

Tofu Stuffed Pita

Scrambled dill tofu fills a pocket pita with cucumbers and sprouts.

Ingredients

  • 7 oz firm tofu half a block
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tsp dill weed
  • 1 tsp pickle juice
  • 1/4 tsp salt
  • 12 slices of cucumber
  • sprouts
  • 2 whole pitas cut in half

Instructions

  1. In a bowl, break the tofu into crumbles by pressing with the back of a fork. Mix in the garlic and onion powder, dill, pickle juice, and salt.

  2. In a small frying pan on medium low heat, warm the tofu. Stir occasionally until the tofu is warmed through and begins to brown a bit.

  3. Open the pita pockets and fill with tofu, cucumbers, and sprouts. Enjoy!
