Sloppy Joes
When you grow up with a mom as a vegetarian, you tend to not enjoy meat very much. Now, I love my mom. She was amazing at just about anything she did. Except cooking. She had a few things that she did well but cooking meat was not one of them. Hence, why I became a vegetarian. The meat that she did cook had no flavor – and no wonder, she never tasted it so how would she know how to make it better. Anyway, I could go on. For years I didn’t eat meat either. It wasn’t until I was pregnant with Emma (14) that I began to eat meat again. Even now, I don’t eat a whole lot. I haven’t always enjoyed it so you need to know that the meat I do cook, is going to taste good. If I share a recipe with meat, you can count on flavor!
That is true with this sloppy joe recipe. Lot’s of flavor! Don’t be scared of some of the ingredients. When it is all added, cooked, and served = delicious. Trust me!
Sloppy Joes
Ground beef with so much flavor you'll go back for seconds.
Ingredients
- 2 1/2 lbs ground beef
- 2 Tbsp olive oil
- 1 cup onions chopped
- 2 Tbsp tomato paste
- 2/3 cup your favorite BBQ sauce
- 1/2 cup ketchup
- 1/4 cup worcestershire sauce
- 1/4 cup soy sauce
- 1/2 tsp pepper
Instructions

In a bowl, mix the ground beef and onions. This will help the beef be nice and crumbly when you cook.

Heat the oil in a 12 inch skillet on medium heat. Add the ground beef and onion mixture. Cook, breaking up the meat into fine crumbles. Cook until the meat begins to brown. Pour off liquid.

Add the tomato paste and stir until meat is coated. Add the remaining ingredients and stir until it thickens and is all combined. Let simmer on low until read to use - at least 10 minutes.
