Salmon Patties

I never ate fish until I was married.  True story.  This is a FL girl confessing that I grew up 5 minutes from the Inter-coastal Waterway and never ate fish.  It is a sad story.  I can’t say I am completely converted to all things fish, however, I would say eating salmon about once a week is a pretty big change.  I love salmon for it’s beautiful pink color and mild flavor.  The great thing is that most kids like it too (except of course, Beau, who rarely eats anything that could formerly breath.)

The base of this recipe comes from, Diane, Andy’s mom.  The first time I had salmon patties was at her house.  The big difference between the way she made them and the way I make them is the salmon.  She used canned salmon, which tasted great, however, the time it takes to de-bone the salmon drives me crazy.  I just plain don’t have that much time on my hands.  So I buy the frozen Costco fillets and pop ’em in the oven for 12 minutes, mash them up with a fork, and donezo!

 

Mix in the rest of the ingredients and until combined.

Form into patties.

Cook in a frying pan in some butter or coconut oil for 3 minutes on each side.  So easy!

Salmon Patties

Salmon, onions, bread crumbs, eggs, and salt and pepper, combine to make these easy, delicious patties.

Ingredients

  • 4 large salmon fillets
  • 2 eggs
  • 1/3 cup onion minced
  • 1 cup seasoned bread crumbs
  • salt to taste
  • pepper to taste
  • 3 Tbsp butter

Instructions

  1. Mash up 4 large cooked salmon fillets.  You could grill them at 500 degrees F for 3-4 min on each side or bake them at 400 degrees F for 12 minutes.

  2. Mix salmon, eggs, bread crumbs, onions, salt, and pepper in a large bowl until combined.  Form into 12 patties about 2 1/2 inches wide.  

  3. In a 12 inch frying pan, melt 1 1/2 Tbls butter on medium heat.  Place patties in melted butter and cook for 3 minutes on each side, until golden brown.  Repeat until all patties are cooked.
