Peanut Butter Cookies
Luke was so excited the other day when I picked him up from school and had a couple of these in the car with me. He had requested them a few days before because they might be his favorite. Whether you have peanut butter lovers in your house or not, these cookies will be a hit. I am not kidding. Even my non-peanut butter liking daughters will eat these cookies. They are a soft cookie with the classic peanut butter crisscross pattern. So good and even better, easy to make.
Peanut Butter Cookies
Soft peanut butter cookie with the classic crisscross pattern
Ingredients
- 3/4 cup creamy peanut butter
- 1/2 cup vegetable shortening
- 1 1/4 cups brown sugar
- 3 Tbsp milk
- 1 Tbsp vanilla
- 1 egg
- 1 3/4 cups flour
- 3/4 tsp salt
- 3/4 tsp baking soda
Instructions

Preheat oven to 375 degrees Fahrenheit. Line two cookie sheets with parchment paper.

Combine peanut butter, shortening, brown sugar, milk, and vanilla. Mix at medium speed.

Add the egg. Mix until just blended. Add the flour, salt, and baking soda. Mix at low speed.

Make 1 1/4 inch round balls and place on cookie sheet 2 inches apart. Flatten in a crisscross pattern with the back of a fork. Bake for 7-8 minutes. Allow to cool and enjoy!
