Mint Truffles

As I have stated before, I love all things chocolate and mint. My love affair began with the mint oreo duo when I was pregnant with Beau. I craved grasshopper milk shakes. There was an Arctic Circle just down the road from our house so it was easy access when the craving hit.

I have to say that to call what these treats were a “shake” is not quite accurate. I’m not sure people in Utah understand what a milkshake actually is. You are supposed to be able to drink a milkshake through a straw. Most shakes that you order at local burger joints here cannot be drunk through a straw. It is just soft serve stirred up with whatever flavors you want mixed in. In my book, in order for it to be a milkshake, you have to mix some milk in there – am I right? Anyway, I digress.

These mint truffles are everything you love in a truffle. Also the easiest recipe of all time. The most difficult part would be dipping the chocolates. I have stated before that I am not a chocolatier so my chocolate dipping skills are sub-par at best. I have learned a thing or two and I will share them here.

First, for dipping you want to use couverture chocolate – it has to do with the ingredients in the chocolate. I don’t know all the science and you can look it all up if you want but if you want a nice snap to the chocolate shell, it is worth it to get good chocolate. I get mine here. Also, you’ll need to temper the chocolate. This means you need to melt two thirds of the chocolate to a certain temperature and then add seed chocolate (one third you left out) to get the temperature back down. I didn’t realize how important this was until I did it. It really does make a difference in how the chocolate shell forms.

The mint part of these truffles comes from using mint Oreos. Because mint Oreos come double stuff, you will only keep the filling in half of the Oreos you use. If you keep all the filling, it will change the consistency of the truffle.

I like to have a little fun and decorate it with colored candy melts or just a powdered sugar glaze. Whatever you do, they will be delicious.

Mint Truffles

These chocolate mint Oreo truffles won't last long wherever you bring them. They are delicious bites of mint and chocolate goodness.

Ingredients

  • 36 mint Oreo cookies
  • 8 oz package of cream cheese softened
  • 1 lb dark or semi-sweet chocolate

Instructions

  1. Line a baking sheet with parchment paper. Place 18 cookies in the bowl of a food processor. Remove and discard the filling from the remaining 18 cookies and place the cookies in the food processor. Whirl until you have fine crumbs, about 2 minutes.

  2. In a medium bowl, pour in the cookie crumbs and add the softened cream cheese. Mix with a hand mixer until it is all combined and you no longer see white cream cheese.

  3. Form the mixture into one inch balls and place on the baking sheet. You will make about 30-36 balls. Place in the freezer for at least 8 hours or over night.

  4. In a plastic microwave safe bowl, melt ⅔ of the chocolate starting with one minute and then 30 second intervals. Heat to 115°F. Add the ⅓ of the seed chocolate that you did not melt and stir until the temperature comes down to 89°F Now you are ready to dip.

  5. Take a ball and dip it in the chocolate, completely covering the ball with chocolate. Pull out with a fork from the bottom of the ball and tap the side of the fork on the edge of the bowl to allow the excess chocolate to drip off the ball. Place back on the baking sheet to set. Repeat until finished with all the balls. They will harden fairly quickly because they are cold. Enjoy!
