Cheesy Potatoes

There are all kinds of names for these potatoes – potato casserole, funeral potatoes, company potatoes, etc. My one beef with the classic cheesy potato casserole is the cream of chicken soup. I really don’t care for it so my version has NO cream of anything, so if that is what you are looking for – keep looking because you won’t find it here. You also won’t find frozen potatoes, we’ll be using boiled potatoes over here. It might take and extra few minutes, but it is so worth it.

You will make a roux beginning with melted butter and sauted onions and mix that with sour cream and cheddar cheese. Some people like to top it with potato chips, and I have even seen cereal – not here, just some good ol’ Panko bread crumbs. Seriously gang, we’re keeping it real today – real and delicious!!

Cheesy Potatoes

Ingredients

  • 2 lbs russet potatoes peeled and chopped into ½ inch pieces
  • 2 Tbsp butter
  • ¼ cup onions minced
  • 1-2 cloves garlic optional
  • 2 Tbsp flour
  • ½ cup chicken broth
  • ¾ cup milk
  • 1 cup sour cream
  • ½ tsp salt
  • 1 ½ cups sharp cheddar cheese shredded
  • ¼ cup Panko bread crumbs

Instructions

  1. Spray a 9 x 13 inch casserole dish with non-stick cooking spray. Preheat the oven to 350° F.

  2. Peel and cut potatoes into ½ inch cubes. Bring a pot with 2 quarts of water to a boil. Boil potatoes for 10 minutes, until they are tender but not mushy. You want them to keep their shape. Drain and rinse.

  3. In a 9 inch skillet, melt butter over medium heat. Add onions and cook until tender, about 1-2 minutes. Add garlic if you are using it. This is optional – I like it but it is a strong flavor! Add the flour and stir for one minute.

  4. Add the chicken broth and milk, stirring until the roux thickens. Transfer to a medium mixing bowl.

  5. Add the sour cream and salt to the roux and then the cheddar cheese. Next, add the potatoes and mix until combined. Transfer to the prepared dish. Smooth out and sprinkle the Panko bread crumbs over the top. Bake for 30 minutes.
