Have you ever contributed to a cookbook for a fundraiser? They are some of my favorite cookbooks because you usually know the people and trust that they are submitting good recipes. I mean, I would only submit my very best, tried and true recipes to a cookbook and I imagine others have the same idea.

This recipe comes from a cookbook like that. The youth were raising money for a trip so everyone contributed their recipes and now we have a Stuart Ward (name of our church congregation) cookbook. The person who submitted this recipe holds a special place in my memories. Her husband was the branch president (local congregational mister over our small group) when my mom, sister, and I moved to FL in 1983. We lived with my grandparents until my mom made enough money for us to get our own place. It was Christmas of 1984 when that finally happened. When we moved to FL, we only took what could fit in our car and left the rest in MA for my dad to bring down later when we got our own apartment. We didn’t have our Christmas tree or any decorations and didn’t have money to buy new ones. Well, this man and his wife brought over a Christmas tree complete with decorations and even gifts to go under it. It was one of the most tender gifts the three of us ever received and I will never forget it – I was 6.

Whenever I make these muffins, I think of them and what wonderful people they are. It makes them taste better, I think! They are delicious with chopped apple, cinnamon and and nutmeg. Perfect for a quick breakfast or snack – kid approved.

Apple Muffins

Cinnamon apple muffins, great for breakfast or a snack.

Cook Time 20 minutes
Total Time 30 minutes
Servings 12

Ingredients

  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1 egg slightly beaten
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 3/4 cup apple chopped – about 1 apple – if you cut it and there is more than 3/4 cup, just use the whole apple

Instructions

  1. Preheat oven to 400 degrees Fahrenheit and line muffin tin with baking cups.  Combine dry ingredients in a bowl.

  2. Combine egg, milk and oil and add to the dry ingredients.  Add chopped apples. and stir until moistened.

  3. Spoon into prepared muffin cups 2/3 full.  Bake for 20 minutes.
