Easily one of my favorite recipes!  In high school a friend and I who worked and carpooled to the same job after school would leave early and drive to the Olive Garden and both order Fettuccine Alfredo before going to work.  She gave me this recipe.  I have tweaked it a little over the years and it is on our menu rotation quite frequently.  You can serve it over any kind of pasta, use it as a dipping sauce, and even add chicken or sausage.  Make sure you buy a wedge of Parmesan and shred it yourself.  The prepackaged cheese will not melt as smooth and gives you a grainy texture.

If you like the Olive Garden’s Alfredo sauce, you will like this one.  You might even like it more – I do.  It is creamy and full of Parmesan.  It also has a surprise dash of nutmeg.  I know what you are thinking, nutmeg?  But don’t hesitate or be weary – it will be delicious and you will thank me for saving you time and money.  You may never have to go to Olive Garden again!

 

Alfredo Sauce

Creamy, full of Parmesan and a dash of nutmeg.  Put it over pasta, add chicken or sausage and serve with salad or steamed vegetables.

Ingredients

  • 1 cup heavy cream
  • 6 Tbsp butter
  • 1 cup Parmesan cheese shredded
  • dash nutmeg
  • 1/4 tsp salt

Instructions

  1. In a small saucepan, add cream and butter.  Stir until the butter is melted.

  2. Add a dash of nutmeg and salt.  Allow to come to a boil.  Boil for 2 minutes

  3. Add Parmesan and turn off the heat.  Do not let it boil.  Stir until the cheese is melted.  Serve over pasta or use a dipping sauce.
