Twice Baked Potatoes
I love potatoes. There are a million ways to cook a potato. French fries, baked, boiled, roasted, hash browns, mashed, fried, scalloped, cheesy, etc. Twice baked potatoes are one of the family favorites. Bake a potato, add some yummy stuff and bake it again. Not too hard!
Twice Baked Potatoes
Potato skins filled with smashed potatoes, onions and cheese, baked again with more melted cheese on top.
Ingredients
- 6-8 medium potatoes
- 1/2 onion diced
- 1 1/2 cups cheddar cheese shredded
- 1 tsp salt
- 1/4 tsp pepper
- 1 stick butter
Instructions

Preheat oven to 350 degrees Fahrenheit.

Wash potatoes lightly slit each side, long ways (the way you will cut the potato in half once cooked.

Bake potatoes for one hour.

Saute onion on medium heat in a small frying pan, for 2 minutes, until tender.

When the potatoes are done, slice each in half, long ways.

Holding with a towel. Scoop out the inside of the potatoes, leaving the skin. Place the skins on a baking sheet.

Mix all the potato in a medium bowl with the butter, onion, 3/4 cup cheese, salt and pepper.

Scoop about 1/4 of a cub of mixture into each skin. Sprinkle with remaining cheese.

Bake again for about 10 minutes, until cheese is melted.
