Chocolate Sheet Cake

Confession – we do not call this Chocolate Sheet Cake at our house.  We call it Staci’s Sheet Cake.  This recipe comes from my sister-in-law, Staci.  She made it once, for a family event and it was so good I asked for the recipe.  She got it from one of those cook books that your church or school makes for a fundraiser.  So there you have it, you know it is good when someone submits it for a cookbook!  Believe me, it’s go-back-for-seconds good!

The recipe is not difficult, however, there are a few more steps than your typical cake.  You will need a few bowls and a couple small saucepans.  The cake and icing both have chocolate in them but not a large amount so the flavor is a mild chocolate.  The real surprise is the cinnamon in the cake mix.  It really takes the cake to another level – chocolate and cinnamon – you definitely have to try it!  Also, you can add nuts to the icing. We have some kiddos at our house that aren’t fans of nuts on top of their cake so I omit them.

Chocolate Sheet Cake

Moist mild chocolate and cinnamon flavored cake topped with a soft chocolate frosting that will melt in your mouth.

Ingredients

  • 2 cups flour
  • 2 cups sugar
  • 1/2 tsp salt
  • 1 tsp cinnamon
  • 1 cup butter
  • 1 cup water
  • 3 Tbsp cocoa
  • 2 eggs
  • 1 tsp baking soda
  • 1/2 cup buttermilk
  • 1 tsp vanilla

Icing

  • 1/2 cup butter
  • 3 Tbsp cocoa
  • 6 Tbsp milk
  • 3 1/2 cups powdered sugar
  • 1 tsp vanilla
  • 1/2 cups nuts optional

Instructions

  1. Grease and flour a sheet pan (no need for parchment paper - non-stick cooking spray and flour sprinkled and tapped around the pan will work). Preheat oven to 350°F

  2. Sift flour, sugar, salt, and cinnamon into a large bowl.  

  3. In a sauce pan, bring butter, cocoa, and water to a boil.  Pour over the flour mixture and mix on low speed. 

  4. In another bowl add eggs, baking soda, buttermilk, and vanilla.  Mix together and add to the flour mixture.

  5. Pour in prepared pan and bake for 20 minutes.

Icing

  1. Place butter, cocoa and milk in a saucepan. Melt butter and mix but do not boil. Remove from heat.

  2. In another bowl, combine sugar, vanilla, and nuts (if you want).  Pour butter mixture into the bowl and mix until there are no lumps.  Spread over the cake as soon as it is done.  Let cool before serving.
