Zucchini Fries

Crispy fried zucchini sticks served with your favorite marinara.

Ingredients

  • 2 zucchini sliced long ways into sticks
  • 1 cup Italian bread crumbs
  • 1/2 tsp salt
  • 1/4 tsp pepper
  • 1/2 cup flour
  • 2 eggs

Instructions

  1. Heat oil in a fryer or frying pan.  Place flour in a gallon sized zip-lock bag.  Place zucchini sticks in the bag and shake to coat.

  2. Beat eggs in a shallow bowl and combine the dry ingredients in another shallow bowl.

  3. Place sticks in eggs a few at a time to coat and then into the bread crumb mixture.  Fry in oil for two minutes.  Place on a plate with a paper towel to collect excess oil.

  4. Serve with your favorite marinara sauce.
