Soft and Chewy Oatmeal Raisin Cookies

These cookies are the ultimate oatmeal raisin cookie.  They are soft and chewy, full of raisins.

Ingredients

  • 2 cups all purpose flour
  • 1/2 tsp salt
  • 1/2 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp cinnamn
  • 3/4 cup butter softened to room temperature
  • 1/4 cup vegetable shortening
  • 1 cup sugar
  • 1 cup brown sugar packed
  • 1/4 cup honey
  • 2 eggs
  • 1 Tbls vanilla
  • 3 cups old-fashioned oats
  • 2 cups raisins

Instructions

  1.  Preheat oven to 350°.  Line baking sheet with parchment paper.

  2. In a small bowl, whisk together flour, salt, baking soda and powder, and cinnamon.

  3. In a mixer, cream butter, shortening, and sugar.

  4. Add honey, eggs, and vanilla.

  5. Add the flour mixture until all combined.

  6.  Add oats and raisins until incorporated.

  7. Use a medium ice cream scoop to place on cookie sheet.

  8.  Bake for 11 minutes. Let cool on baking sheet before placing on a cooling rack.
