Liege Waffles

Crispy on the outside, soft on the inside.  These rich waffles are perfect for breakfast, lunch, or dinner.  Serve with fresh fruit or a nutty topping.

Ingredients

  • 1 pkg yeast
  • 1/3 cup lukewarm water
  • 1 1/2 Tbls sugar
  • 1/8 tsp salt
  • 2 cups flour
  • 2 tsp vanilla
  • 3 eggs
  • 3/4 cup butter softened
  • 1/2 cup pearl sugar

Instructions

  1. Mix yeast, water, sugar, and salt in a small bowl.  Let sit for 5-10 minutes until the yeast activates and becomes foamy.

  2. Place flour in the bowl of a mixer and make a well.

  3. Pour in the yeast mixture and vanilla. Mix with a dough hook.

  4. While mixing, add one egg at a time, alternating with 2-3 tablespoons of butter.

  5. Place in a bowl and cover with plastic wrap sprayed with non-stick cooking spray.

  6. Let rise for 1 1/2-2 hours.

  7. Gently mix in pearls and let rest for 15 minutes while the waffle iron heats up.

  8. Place 2/3 cup of mixture on the waffle iron (I use rectangular shaped iron) and cook for 3-5 minutes, until golden.
