Crispy on the outside, soft on the inside. These rich waffles are perfect for breakfast, lunch, or dinner. Serve with fresh fruit or a nutty topping.
Mix yeast, water, sugar, and salt in a small bowl. Let sit for 5-10 minutes until the yeast activates and becomes foamy.
Place flour in the bowl of a mixer and make a well.
Pour in the yeast mixture and vanilla. Mix with a dough hook.
While mixing, add one egg at a time, alternating with 2-3 tablespoons of butter.
Place in a bowl and cover with plastic wrap sprayed with non-stick cooking spray.
Let rise for 1 1/2-2 hours.
Gently mix in pearls and let rest for 15 minutes while the waffle iron heats up.
Place 2/3 cup of mixture on the waffle iron (I use rectangular shaped iron) and cook for 3-5 minutes, until golden.
