Gingerbread Cake

Fluffy cake with all the spices you expect from gingerbread.

Ingredients

  • 1 1/4 cups flour
  • 3/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp ginger
  • 1/4 tsp cloves
  • 1/4 tsp salt
  • 1 egg
  • 1/4 cup oil
  • 3/4 cup molasses
  • 1/2 cup hot water

Instructions

  1. Preheat the oven to 350 degrees Fahrenheit.  Grease and flour a 9 x 9 inch pan.

  2. Mix dry ingredients in a medium bowl.  In a small bowl, mix egg, oil, and molasses until combined.  Stir in hot water.  Pour into the dry ingredients and mix until smooth.

  3. Bake for 20-25 minutes, until a toothpick comes out clean.  Let cool.
