Corn Fritters

These bite size golden nuggets are a delicious appetizer or side dish. Dipped in syrup, you won't be able to eat just one.

Ingredients

  • 1 cup corn meal
  • 1 cup flour
  • 4 tsp baking powder
  • ¼ cup sugar
  • ¼ tsp salt
  • tsp pepper
  • 1 egg
  • 1 cup buttermilk
  • 1 14.75oz can corn
  • ½ cup creamed corn
  • vegetable oil

Instructions

  1. In a 9 inch skillet, pour in about 1/4 inch of vegetable oil on medium heat.

  2. In a medium bowl, combine the dry ingredients. In a small bowl, mix the egg and buttermilk.

  3. Add the buttermilk mixture to the dry ingredients and mix until combined. Add the corn and creamed corn and mix.

  4. Gently place the mixture in the oil by spoonfuls, about. Allow to cook for a 30 seconds to one minute until the bottom is golden brown. Turn over and cook for another 30 seconds to one minute. Remove from the skillet and place on a paper towel. Allow to cool for a couple minutes and then enjoy. I like to dip them in maple syrup.
