Ingredients

Buttermilk Pancakes

  • 1 1/4 cups flour
  • 1 egg
  • 1 1/4 cups buttermilk
  • 1/4 cup sugar
  • 1 heaping tsp baking powder
  • 1 tsp baking soda
  • pinch salt
  • 1/4 cup vegetable oil or melted butter

Buttermilk Syrup

  • 1/2 cup butter
  • 1/2 cup buttermilk
  • 1 cup sugar
  • 1 tsp vanilla
  • 1/2 tsp baking soda
  • 1/3 cup jam - any flavor optional

Instructions

Pancakes

  1. Mix all ingredients in a medium bowl.

  2. Place on hot griddle with a medium ice cream scoop and flip when bubbles appear and are golden brown.

  3. Serve with syrup and fruit topping.

Syrup

  1. In a medium sauce pan on medium heat, melt butter.  Add sugar and buttermilk and stir until the mixture begins to boil.  This is when you would add the jam if you want to flavor the syrup.

  2. Add vanilla and stir (you could also add maple extract if you want it to have maple flavor).  Add baking soda and turn off the heat.  The mixture will foam and double in size.  Stir the mixture and let it settle for a couple minutes.  Pour into a serving dish or container.
